Sweet Coconut Rice Appam
Lacy edges, spongy centre — appam is fermented rice batter swirled in a curved pan until it forms a bowl-shaped pancake. The slight tang from fermentation pairs perfectly with a coconut stew or egg curry.
Ingredientsfor 3 servings
- 500 g Raw rice powder
- 250 g Coconut milk
- 250 g Nut paste — ground
- 250 g Sugar
- 2 nos Egg
- 1 tsp Cardamom powder
- 1 cup Coconut — grated
- Ghee, to taste
- Salt, to taste
Preparation
Step 1
For preparing sweet coconut rice appam, first mix rice powder, salt, groundnut paste and egg.
Step 2
Whisk well. Make smooth batter like appam.
Step 3
Keep for 15 minutes.
Step 4
Mix coconut grated, cardamom and sugar together.
Step 5
In appa chatti, pour a laddle of batter and twist it. Pour ghee on sides.
Step 6
Place 2 tsp coconut mixture in it and Put the lid on and cook.
Step 7
Sweet coconut rice appam is ready.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
