Sweet Broken Wheat Fritters
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 6 servings
- 2 cup Broken wheat
- 1 cup Coconut — grated
- 3/4 Cup(crushed) Jaggery
- 1/2 tsp Cardamom powder
- Salt
- Water, to taste
- For frying Oil
Preparation
Step 1
Wash the broken wheat and soak it for 4 hours.
Step 2
Grind the soaked broken wheat into a coarse paste without adding water.
Step 3
Convert the broken wheat paste and grated coconut into a bowl. Melt the crushed jaggery in 1/4 cup water until it melts. Pour it over the broken wheat mixture.
Step 4
Now Heat the oil in a kadai once the oil is heated well, reduce the temperature to low, now put the small portion of broken wheat mixture and fry till golden brown.
Step 5
And crispy Broken wheat Fritters are ready now.
Tip
Ghee quality matters enormously in traditional sweets. Use homemade ghee if you can — the flavour is incomparably richer.
