Super Cool Egg Burji
Eggs cooked the Kerala way — with a rich masala of shallots, tomatoes, and spices. Fast enough for a weeknight, flavourful enough to feel like effort went in.
Ingredientsfor 4 servings
- 5 nos Egg
- 2 nos Onion — chopped
- Ginger A small piece
- 2 - Garlic pods
- 3 tsp Coconut — grated
- 2 nos Tomato — chopped
- 1 Stem Curry leaves
- 2 nos Green chillies
- 1 tsp Pepper
- 1 tsp Chicken masala
- 1 tsp Mustard seeds
- 2 - Red chillies (Kollamulaku)
- 2 tbsp Oil
Preparation
Step 1
Make a paste of chopped onions, ginger, garlic and 1/4 tsp of salt.
Step 2
Warm the oil in a kadai or a pan.
Step 3
Add mustard seeds and when they allow to crackle, add red chillies.
Step 4
Add the onion paste and sauté.
Step 5
Stir continuously on a medium flame, till the paste becomes lightly browned.
Step 6
Add chopped green chillies.
Step 7
Add the chicken masala and simmer for 1 - 2 minutes.
Step 8
Beat the eggs with 2 tsp of salt.
Step 9
Add coconut followed by the beaten eggs.
Step 10
Cook for 30 seconds on medium heat.
Step 11
Add the chopped tomato and pepper powder.
Step 12
Cook further for a minute or two.
Step 13
Add curry leaves and Stir everything together thoroughly. Serve hot.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
