Suji (Rava) Payasam
The kind of payasam that appears at every Sadya and disappears first from the banana leaf. Slow-reduced milk, a touch of sweetness, and the warmth of cardamom — simple in concept, extraordinary in taste.
Ingredientsfor 3 servings
- 1 litre Milk
- 100 g Wheat Rava
- 200 g Sugar
- 50 g Cashew nut
- 1/4 tsp Cardamom powder elakkya podichatu
- 21/2 tbsp Ghee
- 1 cup Water
- 50 g Raisins mundiree
Preparation
Step 1
Heat little ghee in a frying pan and fry the cashew nuts and raisins.
Step 2
Fry wheat rava in the remaining ghee until the colour changes to light brown.
Step 3
Boil 2 measures of water in a thick vessel.
Step 4
Add fried wheat rava and cook.
Step 5
Add sugar and keep stirring.
Step 6
Allow the mixture to boil for about 2 to 3 minutes, take it off the heat.
Step 7
Boil and add the milk to payasam. 8)Mix cashew nuts, raisins and cardamom powder.
Step 8
Suji (Rava) Payasam is ready to serve! :- the Suji (Rava) Payasam!
Tip
The payasam will thicken significantly as it cools. Stop cooking when it is still slightly thinner than your target consistency.
