Stuffed Mushroom
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 4 servings
- Mushroom : 4 to 5 nos (button mushroom
- Onion :1 no
- Chilly : 1 no
- Mint leaves, a few
- Garam masala : ½ tsp
- Paneer : 2 tsp ( grated
- Salt, to taste
- Oil : to fry
Preparation
Step 1
Set a pan on the stove, add few drops of oil and cook onion.
Step 2
Add the green chillies and mint leaves as well.
Step 3
To this add the garam masala and salt. Sauté.
Step 4
Once done take it off the heat and let it cool. Add the grated paneer.
Step 5
In the mushroom remove the stem and also peel the center portion and make it hollow. Stuff the above.
Step 6
Set a pan on the stove add oil to the level the mushroom and fry.
Step 7
Fry till the mushroom is crisp and serve hot.
Step 8
Mushroom can also be boiled in water by adding salt for about 5 minutes so that the frying time is reduced.
Step 9
For stuffing even corn makes a good choice.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
