Stuffed Chilli Potato Bhaji
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 5 servings
- Green chillies : ½ k gm
- Potatoes boiled and mashed : 3 nos
- Besan / gram flour : 1 cup
- Turmeric powder : 1 tsp
- Red chilli powder : 1 tsp
- Baking soda : ¼ tsp
- Freshly chopped coriander leaves, a few
- Salt, to taste
- Oil — for frying
Preparation
Step 1
Slit the green chillies lengthwise.
Step 2
Make a thick batter with the besan / gram flour, turmeric powder, red chilli powder, salt and baking soda and set aside.
Step 3
Use water to make the batter as needed.
Step 4
Boil and mash the potatoes with salt and add chopped coriander leaves.
Step 5
Stuff the chillies with the mashed potato and coat with the besan / gram flour batter.
Step 6

Heat oil and fry in hot oil the bhajis till golden brown.
Step 8
Goes well with coriander chutney.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
