Stuffed Bread Toast

Ingredientsfor 2 servings
- 2 nos Eggs
- 8 nos Bread slices
- 1 nos Potato
- 2 - Carrots
- Fresh green peas A handful
- Chilly powder, to taste
- Salt, to taste
Preparation
Step 1
Boil the vegetables.
Step 2
Make a paste of the boiled vegetables.
Step 3
Add chilli powder and salt.
Step 4
The paste should have very less water content.
Step 5
Beat both the eggs, add chilli powder and salt.
Step 6
Pour the beaten eggs into a flat plate.
Step 7
Get 2 bread slices, spread the vegetable paste in between them, just like spreading jam on a bread.
Step 8
Heat some oil in a pan.
Step 9
Dip the bread in eggs, so that bread has a thin coating of eggs on it and fry in the pan.
Step 10
Just like you fry an omlet.
Step 11
Fry both sides.
Step 12
Goes well with tomato sauce.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
