Stuffed Bread
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 7 servings
- 5 nos Bread pieces
- 2 nos Egg
- 3 nos Potatoes — mashed
- 1 nos Onion — finely chopped
- 1 tsp Ginger garlic paste
- 1 cup Cooked vegetables Green peas, Carrot, Beans
- 3 nos Green chillies
- 1 tsp Mustard seeds
- 3 tbsp Masala powder
- Salt, to taste
- Oil (for frying
Preparation
Step 1
Heat 2 tbsp of oil in a skillet.
Step 2
Let the mustard seeds crackle.
Step 3
Add the chopped onions, green chillies and sauté.
Step 4
When the onions goes golden brown, add the ginger-garlic paste and cook for a minute.
Step 5
Add the vegetables and cook for about 2 minutes.
Step 6
Add the potato, salt and masala powder.
Step 7
Cook this for about 2 minutes with little water and set aside.
Step 8
Heat the oil in a skillet.
Step 9
Beat the eggs.
Step 10
Stuff the mixture into each bread and roll them.
Step 11
Dip the rolls in beaten egg.
Step 12
Fry in hot oil the rolls.
Step 13
Serve while still hot with ketchup.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
