Squid(Koonthal) Nirachathu
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 2 servings
- 1/4 kg Squid Koonthal
- 5 nos Green chillies split
- 1/2 cup Coconut — grated
- 1/4 cup Red onions — chopped
- 3 Cloves Garlic — chopped
- 1/4 + Turmeric powder
- 1/4 tsp Mustard seeds
- 1 tsp Chilly powder
- 2 Springs Curry leaves
- 1/2 cup Water
- Oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing squid nirachathu, clean and cut the squid tentacles finely. Keep the body of the squid.
Step 2
Allow to crackle the mustard in oil.
Step 3
Drop in green chillies, red onions, coconut, garlic, curry leaves and turmeric powder. cook it, stirring well.
Step 4
Next, add in the chopped squid tentacles and water. Cook till the water evaporates on low heat.
Step 5
Stuff this mixture into the body of the squid and stitch the opening of the squid with a needle and thread.
Step 6
In a bowl mix chilly powder, turmeric powder and salt in some water.
Step 7
Dip the stuffed squid in the above mixture and fry it in hot oil till it becomes crispy.
Step 8
Squid nirachath is ready. Serve right away. While serving, remove the thread.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
