Squid-Samundra Phenee Fry
Squid/samundra phenee/Kanavai fry is prepared by cooking squid pieces with onion and then stir frying with green chillies, pepper, cumin powder and other ingredients.
Ingredientsfor 4 servings
- Squid cleaned and — cut into small rounds, kanava/koonthal
- 4 nos Green chillies cut in rounds
- 1 nos Onion — sliced
- 3 nos Garlic cloves — crushed
- Turmeric powder A pinch
- 1/4 tsp Cumin powder (Jeerakam)
- 1/4 tsp Pepper powder
- Oil, to taste
- Salt, to taste
Preparation
Step 1
Heat the oil in a frying pan and cook sliced onions, ginger, green chillies and garlic till soft. Set aside.
Step 2
Stir in sliced squid pieces with salt, turmeric and pepper. Cover the pan. Lower the heat and cook in low flame until squid pieces are almost done and water has evaporated. (squid has lots of water in it so no need to add water while cooking).
Step 3
Place a pan on the stove, heat oil and stir fry the squids.
Step 4
Squid/samundra phenee fry is ready. Serve hot with rice.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
