Spicy Pepper Mutton
Tender pieces of mutton cooked low and slow with a generous blend of Kerala spices. The gravy thickens as the meat cooks, and the flavour deepens with every passing minute.
Ingredientsfor 5 servings
- Mutton : 1 k gm
- Onion : 3 nos
- Garlic : 10 nos
- Ginger : 2 inch piece
- Green chilly : 4 nos
- Pepper powder : 1 tsp
- Garam masala : 3 tsp
- Salt, to taste
- Oil, to taste
Preparation
Step 1
Heat a pan add oil in it and when it gets hot add ginger, garlic to it and give it a good stir for 3 minutes.
Step 2
Next, add the onion to it.
Step 3
Next, add curry leaves and stir until it gets brown.
Step 4
Next, add salt, pepper powder and garam masala to it.
Step 5
Give it a good stir for 3 minutes.
Step 6
Next, add the mutton to it.
Step 7
Give it a good stir.
Step 8
Close the cooker or pan and wait till it gets cooked.
Step 9
When it gets cooked transfer it to the serving dish.
Tip
Low and slow is the only way with mutton. Rushing the cooking gives you tough, chewy meat instead of fork-tender pieces.
