Spicy Buffalo Wings
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 5 servings
- Chicken : 1 k gm
- Chilli powder : 2 tsp
- Pepper : 2 tsp
- Tomato sauce : 2 tsp
- Oil: 1 tbsp
- All purpose flour : 1 cup
- Salt, to taste
- Butter or oil : 4 tsp
- Honey or brown sugar : 1 tsp
- Ketchup : ¼ cup
- Water : ¼ cup
- 3 tsp Hot sauce/chili sauce : 2
- Chilli powder : ½ tsp for extra hot wings — optional
- Garlic paste : ½ tsp
- Vinegar : 1 tsp
- Salt, to taste
Preparation
Step 1
Marinate the chicken with salt, pepper, chili powder, tomato sauce/ketchup and 1 tbsp. Oil.
Step 2
Cover and refrigerate for at least 2 hours.

Mix this chicken pieces to a bowl with flour and coat well carefully and fry in hot oil them.

In a deep pan, Heat the oil or butter. Add garlic and stir fry until fragrant.

Add all the other ingredients and simmer until thick and saucy. Adjust to your taste and consistency.

Once the wings are ready, toss them in this sauce and then spread them out on the tray for a few minutes to absorb the flavor and cool slightly.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
