Special Pepper Chicken Roast
Slow-roasted in coconut oil with a generous hand of spices, this chicken fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 7 servings
- 1 kg Chicken cleaned and — cut into medium pieces
- 8 nos Onion — sliced
- 1 nos Tomato — sliced
- 25 g Ginger paste
- 50 g Garlic paste
- 3 nos Green chillies paste
- 2 tsp Vinegar
- 4 tsp Red chilly powder
- 2 tsp Pepper powder
- Salt, to taste
- 1 tsp Soya sauce
- 1 tsp Tomato sauce
- 2 Stems Curry leaves
Preparation
Step 1
Clean the chicken and cut into medium pieces and marinate with a mixture of vinegar, chilly powder, pepper powder and salt.
Step 2
Heat 3 tsp of oil in a pan and fry 5 thinly sliced onions till it becomes golden brown.
Step 3
Add ginger, garlic and green chilly paste.
Step 4
Keep in low flame and stir it for 2 min.
Step 5
Add sliced tomato and stir it for 3 min.
Step 6
Keep it in high flame and add marinated chicken pieces into it.
Step 7
Add soya sauce and tomato sauce and mix it well.
Step 8
Season with salt.
Step 9
Close the pan and cook in low flame for 20 min. Stir intermittently till oil comes out.
Step 10
Fry in hot oil 3 thinly sliced onion in a separate pan.
Step 11
Add deep fried onion and curry leaves into the cooked chicken.
Step 12
Stir it continuously for 5 min.
Step 13
Pepper Chicken Roast is ready to serve.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
