Special Egg Curry
A traditional Kerala curry where egg simmers gently in a spiced coconut gravy until every piece soaks up the flavours. The curry leaves and raw coconut oil finish add that characteristic Kerala fragrance.
Ingredientsfor 4 servings
- 4 nos Egg boiled
- 2 nos Tomatoes — chopped
- 2 tsp Oil
- 1/4 tsp Mustard seeds
- 2 nos Dry red chillies
- 2 nos Onion
- 1 piece Ginger
- 4 Cloves Garlic
- 2 nos Green chillies
- Curry leaves, a few
- 1 tsp Fennel seeds
- 1 nos Cinnamon sticks
- 1/2 tsp Pepper powder
- 3 nos Cloves
- 3 nos Cardamom
- Nutmeg Small piece, Jathika
- 1 nos Star anise
- 1/4 tsp Cumin seeds
- 1 tsp Chilly powder
- 1/2 tsp Coriander powder
- 1/4 tsp Turmeric powder
- 1/4 tsp Mustard seeds
- 2 tsp Oil
- 2 nos Dry red chillies
- Salt, to taste
- Coriander leaves, a few
Preparation
Step 1
Boil the egg and cut it into halves set aside.
Step 2
Roast fennel seeds, cinnamon sticks, pepper powder, cloves, cardamom, nutmeg, star anise and cumin seeds. Make it a powder.
Step 3
Warm the oil in a pan, let the mustard seeds crackle, dry chillies. Add onion, ginger, garlic, green chillies and curry leaves.
Step 4
Add ground powder Let it cook for 3 minutes, add number chilly powder, coriander powder, turmeric powder and cook well.
Step 5
Add chopped tomatoes, enough salt and water cook until the gravy thicken.
Step 6
Add boiled eggs, and chopped coriander leaves. Serve hot.
Tip
The oil separating from the masala is your signal that the base is properly cooked. Do not add the main ingredient before you see those pools of oil on the surface.
