Special Crispy Chicken Fry
Kerala-style dry fry where chicken is cooked down until all the moisture evaporates and what remains is intensely flavoured, slightly caramelised, and impossibly moreish. Best with parotta or plain rice.
Ingredientsfor 2 servings
- 1/2 kg Chicken
- 1" piece ginger
- 6 Cloves garlic
- 3 nos Green chilly
- 1 Table cornflour
- 2 tsp Red chilly powder
- 1/2 tsp Turmeric powder
- Oil (for deep frying
Preparation
Step 1
Cut chicken in to small pieces.
Step 2
Make ginger garlic and green chilly as a paste.
Step 3
Mix all the ingredients with chicken.
Step 4
Then fry in hot oil it using oil.
Step 5
Wipe off excess oil.
Step 6
Transfer to serving dish.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
