Special Brinjal Sambhar
It is a tradiotional kerala dish. This Brinjal sambhar is a lentil based dish which is a very good combo with rice.
Ingredientsfor 6 servings
- 1/2k g Brinjal
- 2 Onion — chopped
- 2chopped into tomato
- 5 Green chilly
- 1/4k g Toor dal
- 1 tsp Asafoetida
- 1/2 cup Tamarind juice
- 2 tsp Salt
- 3,4 Coriander leaves
- 3,4 Curry leaves
- 2 tsp Coconut oil
- Fenu greek seeds
- Must
Preparation
Step 1
First cut onions into pieces.
Step 2
Then cut brinjal into pieces.
Step 3
Then cut tomato into pieces.
Step 4
Cut green chilli also.
Step 5
Cookl toor dal for 10 to 15 minutes.
Step 6
Add brinjal,tomato,onion and greenchilly to cooked dal.Add salt also.
Step 7
Add chilli powder and turmeric powder to this.A 1 cup of water.
Step 8
Close the pressure cooker and Let it cook for 10 minutes till all cooked well.After that set aside.
Step 9
Next in a kadai put 2 spoons of coconut oil.
Step 10
Add mustard seeds,when it crackled add fenugreek seeds,dry red chilly and curry leaves.
Step 11
Add sambhar powder and asafoetida to this mix it for 2 minutes.
Step 12
Then mix this tempering to sambhar.
Step 13
Let it bubble for 2 minutes.Now sambhar is ready to serve.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
