Special Beef Pathiri
Soft, layered, and golden from the griddle — this special beef pathiri is the perfect vehicle for scooping up thick curries and gravies. The dough rests until pliable, then gets cooked until each layer separates.
Ingredientsfor 4 servings
- 2 cup Rice flour
- 250 g Beef chopped in small pieces
- 1/2 tsp Turmeric powder
- 1 tsp Chilly powder
- Salt, to taste
- 8 Cloves Garlic — chopped
- 1/2 piece Ginger — chopped
- 2 nos Onions — chopped
- 4 nos Green chillies — chopped
- Curry leaves, a few
- 1 pinch Garam masala
Preparation
Step 1
For preparing special beef pathiri, take a vessel, add the beef pieces, turmeric powder, chilly powder, salt and a little water. Cook well until beef is done and water drains off completely.
Step 2
When the beef is cooked, take it off the heat. Grind it in a mixer grinder.
Step 3
Fry the onion, ginger, garlic, green chillies and curry leaves.
Step 4
Next, add beef and garam masala to it and stir it well in medium heat. Set aside.
Step 5
Knead the rice flour well with hot water and salt.
Step 6
Make balls of the dough.
Step 7
Press balls in a medium thickness on a banana leaf.
Step 8
Spread the beef masala on the pathiri.
Step 9
Press another ball in another leaf and place it above the masala spread pathiri. Press the both pathiri`s sides well so it doesn¦t come apart.
Step 10
If you need you can make one more layer by spreading masala on top of the second pathiri and pressing a third pathiri on top of the second.
Step 11
Cover the pathiri-masala mixture with banana leaf on both sides.
Step 12
Fill half of an idly vessel with water and let it boil.
Step 13
Then place the idly stand in the vessel and place the beef pathiri along with the banana leaf on top of it and cover the vessel with a lid so that the steam doesn¦t escape.
Step 14
Check it at intervals to see that the pathiri had cooked well. You can understand it by inserting a pointed stick in the pathiri. If it sticks on the stick then it not ready to take from the flame.
Step 15
Take it off the heat. when it is cooked well.
Step 16
Special beef pathiri is ready. Serve hot for breakfast, dinner or as an evening snack.
Tip
Thin strips cook faster and develop more crispy surface area than thick cubes. Cut against the grain for tenderness.
