Special Beef Ada
A traditional Kerala sweet snack made with care and a generous hand of ghee. The kind of thing grandmothers make for festivals and grandchildren make excuses to visit for.
Ingredientsfor 3 servings
- Beef masala Beef cooked with turmeric, chilly powder and salt. Mince it
- 1/2 cup Raw rice (Pachari)
- 1/2 cup Moodari
- Water, to taste
- Salt, to taste
- 3-5 tsp Coconut milk
- Coconut — grated
Preparation
Step 1
For preparing special beef ada, prepare beef masala and set aside.
Step 2
Grind raw rice, moodari, coconut milk, grated coconut, water and salt to a smooth paste.
Step 3
Get some of the batter and press it in a banana leaf to make a medium thick circle.
Step 4
Fill half of the circle with the beef masala and fold it to make a half moon shape.
Step 5
Press the side well so that it doesn¦t get separated.
Step 6
Repeat the process and make as many adas as you need.Cover it in grated coconut.
Step 7
Place 3-4 adas in a steam cooker and steam cook it well. Place the adas separately, otherwise it will stick together.
Step 8
Serve it hot.
Tip
The coconut pieces should get slightly crispy along with the beef. They add a textural contrast that makes the dish.
