Simplest Moru Curry In 5 Steps
This homestyle mixed curry is built on a foundation of shallots fried dark in coconut oil and spices toasted until they release their full aroma. It tastes even better the next morning, spooned over cold leftover rice.
Ingredientsfor 4 servings
- 2 cup Curd
- 1½ Dsp Oil
- ¼ tsp Mustard seeds
- ¼ tsp Fenugreek seeds (Uluva)
- 1 medium Onion sliced to small pieces
- 4 nos Garlic pods sliced to small pieces
- 1 inch Ginger sliced to small pieces
- 1 sprig Curry leaves — sliced
- 2 nos Green chillie — sliced
- 1/2 Teaspoon Turmeric powder
- 1 cup Water
- Salt, to taste
Preparation
Step 1
Heat the oil in a vessel.
Step 2
Let the mustard seeds crackle followed by fenugreek seeds, ginger, fry it for 30 seconds, to this then add garlic, fry it for 30 seconds, followed by onion and fry it until onion goes golden brown. Once this is over, add the chillies and curry leaves into the vessel and fry.
Step 3
Add turmeric powder and stir.
Step 4
Add curd and water and stir continuously until mixture is hot but be careful to switch off the fire before the moru curry reaches boiling point.
Step 5
Add salt according to your taste.
Step 6
Your Simplest Moru curry is ready!
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
