Simplest Fish Curry In 5 Steps
This homestyle fish curry is built on a foundation of shallots fried dark in coconut oil and spices toasted until they release their full aroma. It tastes even better the next morning, spooned over cold leftover rice.
Ingredientsfor 3 servings
- 1 kg Fish any
- 3 piece Kukum star — soak in ¼ cup of hot water, kodampuli
- 2 Dsp Oil
- ¼ tsp Mustard seeds
- ¼ tsp Fenugreek seeds (Uluva)
- 1 nos Onion big piece, sliced to small pieces
- 7 nos Garlic pods sliced to small pieces
- 2 inch Ginger sliced to small pieces
- 4 sprig Curry leaves — sliced
- 4 nos Green chillies — sliced
- Salt, to taste
- 1 tbsp Chilly powder
- ¼ tbsp Turmeric powder
- ½ tbsp Pepper powder
- 2 tbsp Coriander powder
- ½ tbsp Ginger powder
- ½ tbsp Garlic powder
- ½ tbsp Aniseeds powder (Perinjeerakam)
Preparation
Step 1
Cut the fish, clean it, strain it. Marinate it with 1/4 tsp of chilly powder and a bit of turmeric powder.
Step 2
Heat the oil in another vessel.
Step 3
Let the mustard seeds crackle followed by fenugreek seeds and ginger, fry it for 30 seconds, to this then add garlic, fry it for 30 seconds, followed by onion and fry it until onion goes golden brown. Once this is over, add the chillies and curry leaves into the vessel and fry.
Step 4
To this vessel, add the powder paste, boil it and then add kukum star solution.
Step 5
Add the cleaned fish and add a bit of additional water, if fish is not fully covered with water. Cook fish for about 25 minutes Add salt according to your taste.
Step 6
Your Simplest Fish curry is ready!
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
