Simple Mushroom Thoran
Simple, honest, and on every Kerala lunch plate — egg thoran is coconut oil, grated coconut, and a handful of spices working quietly together. No fuss, just good food.
Ingredientsfor 4 servings
- 250 g Button Mushrooms
- 2 nos Eggs
- 3 nos Shallots (Kunjulli)
- 3 nos Green chillies
- 1 pinch Fennel seeds Perunjeerakam
- Curry leaves, a few
- 1 pinch Garam masala
- Salt, to taste
- Oil, to taste
- 1 tsp Mustard seeds
Preparation
Step 1
Cut mushroom into small pieces(like making thoran).
Step 2
Slice onion and green chillies. 3)Mix mushrooms with onion and green chillies.
Step 3
Heat a pan, pour oil and let the mustard seeds crackle. Add fennel seeds and curry leaves.
Step 4
Stir in mushroom mix, add required salt and cook for a while.
Step 5
Close with lid and cook till done. Finally add beaten eggs and scramble it. Add garam masala and stir.
Step 6
Can be used with chappathi/rice.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
