Simple Fish Masala
Fresh fish cooked the Kerala way — with coconut, curry leaves, and a tartness that comes from kudampuli or tamarind. Coastal Kerala cooking at its simplest and best.
Ingredientsfor 4 servings
- 500 g Fish white pomfret
- 2 nos Onions sliced thin
- 1 inch Ginger — chopped
- 2 nos Green chillies split lengthwise
- 1/2 tsp Turmeric powder
- 1 tsp Chilly powder
- 2 nos Tomatoes sliced thinly
- Curry leaves i sprig
- 2 tbsp Oil – 1
- 1/2 cup Water
- Salt, to taste
Preparation
Step 1
Clean fish and cut into large pieces.
Step 2
In a frying pan, add oil and sautT the onions, ginger and green chillies.
Step 3
Add curry leaves and give it a good stir. Add chilly powder and turmeric powder and fry well till raw smell disappears.
Step 4
Stir in the tomatoes, water, salt and the fish.
Step 5
Put the lid on and cook till the water has dried and the fish is coated with the masala.
Step 6
Garnish with curry leaves or chopped coriander leaves.
Step 7
Goes well with rice or chappathis.
Tip
Never stir a fish curry with a spoon. Shake the pot gently to coat the pieces — stirring breaks them apart.
