Simple Cucumber Pachadi
A traditional Kerala Sadya dish that carries the flavours of coconut, yogurt, and carefully balanced spices. Each component of the feast has its role, and this one brings a quiet, essential balance to the banana leaf.
Ingredientsfor 2 servings
- 250 g Cucumber finely chopped, Vellarika
- 2 nos Tomatoes — chopped
- 2 nos Green chillies — chopped
- Ginger — crushed
- 11/2 cup Curd
- 1/4 Of Coconut — grated
- Salt, to taste
Preparation
Step 1
Grind the grated coconut to a fine paste.
Step 2
Mix together chopped cucumber, tomatoes, green chillies, crushed ginger and the ground coconut.
Step 3
Beat the curd and add the cucumber mixture.
Step 4
Add required salt and mix gently.
Step 5
Simple cucumber pachadi is ready.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
