Simple Chicken Stew
A gentle, coconut milk-based stew with soft vegetables and whole spices floating in a pale, fragrant broth. Kerala stew is quiet comfort food — not loud with chilli, but warm with cardamom and black pepper.
Ingredientsfor 3 servings
- 1 kg Chicken — chopped
- 1 nos Onion
- 4 nos Green chillies — slit
- 1 tbsp Ginger — minced
- 2 tsp Garlic — minced
- 1 tsp Cumin seeds (Jeerakam)
- 1 tsp Garam masala
- 21/2 cup Coconut milk
- Coconut oil, to taste
- Curry leaves, a few
Preparation
Step 1
For preparing simple chicken stew, Heat the oil in a pan, add garam masala, ginger and garlic.
Step 2
Add onion and cumin seeds.
Step 3
Immediately add chicken and green chillies.
Step 4
Add water and cook chicken till tender.
Step 5
When cooked, add coconut milk and thicken the gravy.
Step 6
Add required salt. Pour oil on top with curry leaves.
Step 7
Goes well with appam, idiappam, idly etc.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
