Simple Chicken Fry
Slow-roasted in coconut oil with a generous hand of spices, this chicken fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 2 servings
- 1 cup Chicken — cut into small piece
- 1 - Kashmiri chilli powder
- ½ - Pepper powder
- 3 nos Green chilli
- Curry leaves, to taste
- Salt, to taste
- Oil, to taste
- Water, to taste
Preparation
Step 1
Marinate the chicken pieces with chilli powder, pepper powder and salt and keep for 15 minutes.
Step 2
Warm the oil in a pan.
Step 3
Pan-fry the chicken.
Step 4
Add green chillies and curry leaves.
Step 5
Fry till done.
Tip
Bone-in chicken gives a richer, more flavourful gravy than boneless. The marrow flavours the curry as it cooks.
