Sharkkara Ada
Sweet, rich, and deeply satisfying — this is the snack that shows up at every Kerala celebration, temple festival, and Onam Sadya. Made with jaggery, coconut, and patience.
Ingredientsfor 4 servings
- 2 cup Rice flour Unboiled
- 1/2 Coconut — shredded
- 200 g Jaggery (Sharkkara)
- 2 nos Cardamom powder (Elakka)
- 2 tsp Ghee
- Salt, to taste
- 4 cup Water
- Banana leaf without central stip
Preparation
Step 1
Roast the rice flour for a few minutes.
Step 2
Mix it with 2 cups of warm water.
Step 3
While mixing, add ghee, cardamom powder and salt to taste.
Step 4
Make little large size balls and set aside.
Step 5
Make µSharkkarapavu¦ by boiling 2 cups of water with jaggery.
Step 6
When it turns to semi liquid, filter and removes the solid particles.
Step 7
Add shredded coconut and Stir everything together thoroughly.
Step 8
Flatten the rice balls on the banana leaf with hand.
Step 9
Spread a spoonfull of coconut mix.
Step 10
Fold the banana leaf with content and steam cook in an oven.
Step 11
Serve when warm.
Tip
The binding point is everything — cook the mixture just until it holds shape when pressed. Overcooked, it turns hard; undercooked, it crumbles.
