Sadhya Sambar
A way of cooking sambar with loads of vegetables and spices. For Onam sadya, you may need to cook so many recipes for the feast.
Ingredientsfor 4 servings
- 1/2 cup Dal Parippu
- 2 tbsp Sambar powder
- Onion(big
- Potato
- Ladies finger(Vendakka
- Yellow pumpkin(Mathanga
- Drumstick(Muringakka
- 1/2 tsp Turmeric powder
- Salt, to taste
- Tamarind A gooseberry sized ball (Puli)
- 1/2 Of Tomato
- 1 tsp Mustard seeds
- 2 - Dry red chillies (Kollamulaku)
- Coriander leaves A, a few
- Curry leaves A, a few
- 1 tbsp Oil
Preparation
Step 1
Pressure cook dal and set aside.
Step 2
Put tamarind in a little water and extract the juice.
Step 3
Heat up a vessel.
Step 4
Boil all the vegetables in it except tomato.
Step 5
When done, add the boiled dal, salt and tomato.
Step 6
When it boils further, add tamarind juice followed by sambar powder.
Step 7
Get some water from the boiling curry and add it into the sambar powder and then add that into the boiling curry.
Step 8
Allow it to boil again.
Step 9
Add coriander leaves and curry leaves.
Step 10
Pour oil into a pan and heat it or a kadai.
Step 11
Let the mustard seeds crackle and cook red chillies and curry leaves.
Step 12
Add the above seasoning into the above sambar.
Step 13
Sambar is ready.
Step 14
Serve sambar hot with rice.

Tip
Toast the cumin seeds lightly before grinding for a deeper, nuttier flavour in the paste.
