Sadhya Pal Payasam
The kind of payasam that appears at every Sadya and disappears first from the banana leaf. Slow-reduced milk, a touch of sweetness, and the warmth of cardamom — simple in concept, extraordinary in taste.
Ingredientsfor 4 servings
- 2 cup Unakkallari
- 2 litre Milk
- 3 cup Sugar
- 3 Spoon Cashew nuts
- 2 Spoon Raisins Onakkamunthiri
- 4 nos Cardamom (Elakka)
- 2 Spoon Ghee
Preparation
Step 1
In a pressure cooker, boil the rice nicely.
Step 2
Add the milk and sugar and give it a good stir, till it becomes little thick.
Step 3
Switch off the gas.
Step 4
Heat ghee in a pan or a kadai.
Step 5
Fry nuts and raisins and add it into the payasam.
Step 6
Add the powdered cardamom into the payasam and give it a good stir.

Tip
The payasam will thicken significantly as it cools. Stop cooking when it is still slightly thinner than your target consistency.
