Ridge Gourd-Drumstick Curry/Peechinga Muringakka Curry
Peechinga Muringakka curry is a tasty veg curry,its preparation is very simple,drumsticks and ridge gourd are boiled and cooked in ground coconut and is tempered with seasoning.The combination of drumstick and ridge gourd with spices is absolutely delightful.it goes well with steamed rice.
Ingredientsfor 4 servings
- 1 cup Ridge gourd
- 1 cup Drumstick
- 1 Tomato
- 1 cup Coconut
- 1/2 tsp Turmeric powder
- 1/2 tsp Chilli powder
- 5 nos Shallots
- 1/2 tsp Mustard
- Curry leaves little
- 2 tbsp Oil
- Water, to taste
- Salt, to taste
Preparation
Step 1
Cook Ridge gourd in water with drumstick,tomato,turmeric powder,chilli powder,curry leaves and salt to taste.
Step 2
In the mean time grind coconut with little water.
Step 3
Pour the ground coconut mixture in to cooked veggies, Bring to a gentle boil and take it off the heat.
Step 4
Heat the oil in a skillet and allow to crackle mustard seed,add chopped shallots and cook until it os golden brown.mix it with the curry.
Step 5
Ridge Gourd-Drumstick Curry/Peechinga Muringakka curry is ready to serve.
Tip
The oil separating from the masala is your signal that the base is properly cooked. Do not add the main ingredient before you see those pools of oil on the surface.
