Ragi Pudding | Healthy Ragi Pudding
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 6 servings
- 300 g Ragi — soak in water for 2 hours
- 1 Ltr Coconut milk
- 500 Gms Jaggery
- 1 tsp Cardamom powder
- 1/2 tsp Salt
- 2 nos. Ripe plantain
- 1/2 cup Channa dhal
- 1/2 ltr Water
Preparation
Step 1
Cook the channa dhal in required water by adding a pinch of salt.
Step 2
Cut the ripe plantain into small pieces.
Step 3
Grind the soaked ragi by adding required water and strain out the milk using a sieve. Add jaggery and 1/2 tsp salt into it. Stir everything together thoroughly and Bring to a gentle boil.
Step 4
Next, add cooked channa dhal and chopped plantain.
Step 5
Finally pour the coconut milk and combine everything. Do not stop stirring. Bring to a gentle boil, When it is well boiled, turn off the heat.
Step 6
Pour the the ragi pudding into a pudding tray and let it cool. Healthy and easy ragi pudding is ready.
Tip
Ghee quality matters enormously in traditional sweets. Use homemade ghee if you can — the flavour is incomparably richer.
