Quick N Tasty Tomato Korma
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 4 servings
- 4 nos Ripe tomato — cut into pieces
- 2 nos Onion finely chopped, medium
- 4 nos Shallots (Kunjulli)
- 4 nos Green chillies
- Ginger A small piece
- 4 nos Garlic pods
- 1 bunch Curry leaves
- Salt, to taste
- Water, to taste
- 1 cup Coconut — grated
- 5 g Poppy seeds Khashakhasha
- 1/2 tsp Turmeric powder
- 11/2 tbsp Coriander powder
- 1 tsp Garam masala powder
- 2 tbsp Coconut oil
- Coriander leaves(finely chopped
Preparation
Step 1
Grind together shallots, ginger, garlic pods and green chillies with a little water.
Step 2
Warm the oil in a pan or kadai.
Step 3
Add the chopped onion and cook well, till it is softened.
Step 4
Add the ground mixture into it and cook well, till the raw smell leaves.
Step 5
Add salt, coriander powder, turmeric powder and the garam masala powder.
Step 6
Add tomato pieces and Stir everything together thoroughly, till the oil clears.
Step 7
Add a little water and cover with the lid.
Step 8
Keep it on low heat for about 5 minutes.
Step 9
Grind the coconut and poppy seeds together.
Step 10
Open the lid and pour the coconut mix along with a little more water.
Step 11
Allow it to boil well.
Step 12
Turn off the heat.
Step 13
Garnish with curry leaves and coriander leaves.
Step 14
Serve while still hot with chappati or dosai.
