A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 6 servings
- 4 piece Black promfret or Mackeral
- 2 nos Tapioca large
- 1 nos Raw banana large
- Turmeric powder
- 1 nos Garlic pod
- 1 cup Coconut — grated
- 1 tsp Red chilli powder
- 1/2 tsp Cumin seeds (Jeerakam)
- Salt, to taste
- Curry leaves
- Coconut oil
Preparation
Step 1
Cut tapioca and raw banana.
Step 2
In a wok, add turmeric, salt and cut fish and boil them together.
Step 3
Grind coconut, jeera, 1 garlic pod and red chilli powder.
Step 4
Add this to the tapioca-raw banana mixture.
Step 5
With the masher, just mash the mixture and cook till the mixture is cooked.
Step 6
Add curry leaves and a tbsp of coconut oil.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
