Pumpkin Wine
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 5 servings
- 3 kg Pumpkin — grated
- 2 kg Sugar
- 4 nos Orange syrup
- 8 nos Lemon syrup
- 6 litre Water boiled & cooled
- 11/2 tsp Yeast
- 1/2 cup Ginger — crushed
Preparation
Step 1
For preparing pumpkin wine, boil water and add pumpkin, sugar, orange and lemon syrup.
Step 2
Take it off the heat. and let it cool.
Step 3
Add yeast and ginger to it.
Step 4
Store in jar and stir daily.
Step 5
Filter after 2 days.
Step 6
Serve after 21 days.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
