Pumpkin Pops
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 3 servings
- 3 cup Pumpkin
- Turmeric A pinch
- 1 cup Coconut paste
- 2 tsp Raw pepper — crushed
- 1 nos Onion — chopped
- Fenugreek powder A pinch
- Coconut oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing pumpkin pops, cut pumpkin in round shape(with cutter).
Step 2
Fry the pumpkin with little oil in a pan. Cover and fry it.
Step 3
Set aside. In the same pan, add oil.
Step 4
Add onion in it and fry.
Step 5
Add turmeric and pepper.
Step 6
Add coconut paste and fry it.
Step 7
Add fenugreek powder and pumpkin. Fry again.
Step 8
Pumpkin pops are ready.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
