Pumpkin Leaf Thoran
It is a nadan curry prepared with pumpkin leaves. It goes well with boiled rice.
Ingredientsfor 6 servings
- 1 cup Pumpkin leaf
- 1/2 cup Coconut — grated
- 1 tsp Cumin seeds
- 2 Onion — chopped
- 1 tsp Mustard
- 1 tsp Oil
- 1 tsp Chilli powder
- 1 tsp Urad dal
- 1 tsp Salt
Preparation
Step 1
Pour oil into a kadai and heat it and add mustards.when it allow to crackles add urad dal.Stir for a minute.
Step 2
Chop pumpkin leaves very nicely.
Step 3
Grind grated coconut,cumin seeds,onions and chilli powder and turmeric powder in a mixer.
Step 4
Mix this ground mix with chopped pumpkin leaves and set aside.
Step 5
Add this mix to kadai add salt and stir for 2 minutes.
Step 6
Close the kadai with lid and cook pumpkin leaf for 5 minutes.
Step 7
Now pumpkin leaf thoran is ready to serve.
Tip
Shred the vegetable as fine as you can — the thinner the cuts, the better the thoran. A sharp knife makes all the difference.
