Pulisseri
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 5 servings
- 1 nos Pineapple — finely chopped
- 1 nos Cucumber — finely chopped
- 1/2 Of Coconut — grated
- 2 tsp Turmeric powder
- 1 tsp Jaggery Sharkara
- 1 tsp Cumin seeds (Jeerakam)
- Curd, to taste
- 3 Cloves Garlic
- 3 nos Green chillies — chopped
- Salt, to taste
Preparation
Step 1
Heat 2 cups of water in a vessel.
Step 2
Put the pineapple and cucumber pieces together with turmeric, salt and cook till it done.
Step 3
Grind together the grated coconut, cumin seeds and garlic cloves and add this paste to the above.
Step 4
Add the green chillies and Let it cook for 5 minutes.
Step 5
Switch off the stove and allow it to cool.
Step 6
Add curd and Stir everything together thoroughly.
Step 7
Add a little jaggery.
Step 8
Goes well with rice.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
