Prawn Fry
Pan-fried until the edges go dark and crispy, this prawn fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 4 servings
- Prawns(Chemmeen)(cleaned and boiled
- 1/2 tbsp Pepper
- 1/2 tsp Turmeric powder
- 1 tbsp Chilly powder
- Soya sauce A little
- 1/4 cup Allpurpose flour Maida
- 1 nos Egg
- Salt, to taste
- Oil — for frying
Preparation
Step 1
Marinate the prawns with turmeric, chilly powder, pepper and salt.
Step 2
Stir everything together thoroughly together maida and egg and make it into a very thick batter.
Step 3
Add pepper, salt and little soya sauce into the batter and Stir everything together thoroughly.
Step 4
Dip the prawns in the batter and fry in hot oil in hot oil.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
