Prawn Cutlet
Cooked and mashed prawns mixed with coconut and other ingredients to make cutlets.
Ingredientsfor 3 servings
- 1 cup Prawns
- 1/2 cup Potatoes cooked and — mashed
- 1/4 cup Coconut — grated
- 1/4 cup Shallots — minced (Kunjulli)
- 1/4 tsp Cumin seeds (Jeerakam)
- Turmeric powder A pinch
- 1 tsp Lime juice
- 2 nos Green chillies — finely chopped
- 3 nos Garlic — crushed
- Ginger — crushed
- 1 nos Egg beaten
- Bread crumbs, to taste
- Coriander leaves Few — optional
- 1 tsp Vinegar
- Oil — for frying
- Salt, to taste
Preparation
Step 1
Clean the prawns and wash nicely. Drain and set aside.
Step 2
Place a pan on the stove and put the cleaned prawns, one cup water, vinegar and required salt. Cook in medium heat until the prawns are cooked and water evaporates completely.
Step 3
Crush coarsely the cooked prawns in a blender and set aside.
Step 4
Place a pan on the stove and pour oil. Heat the oil and allow to crackle cumin seeds. Add minced shallots, green chillies, ginger, garlic, turmeric powder, coconut, mashed potato, lime juice and required salt. Mix gently and add the crushed prawns. Remove from fire.
Step 5
Add some minced coriander leaves and mix.
Step 6
Make small cutlets with your palm. Dip each cutlet in the beaten egg and roll in bread crumbs.
Step 7
Place a pan on the stove and pour sufficient oil for fry in hot oiling. Fry both sides of the prawn cutlet until golden in color.
Step 8
Prawn cutlet is ready and serve hot.
Tip
Drain on a wire rack instead of paper towels — the rack keeps the bottom from getting steamy and losing its crispness.
