Pothu Thoran
The everyday side dish that Kerala never tires of. Beef is shredded fine, tossed with coconut and spices, and cooked just enough to soften without losing its bite.
Ingredientsfor 5 servings
- ½ kg Buffalo meat homemade beef boiled in salt & pepper and minced — minced
- 2 nos Onion finely chopped, big
- 5 nos Garlic pods
- 1 tsp Ginger — chopped
- Curry leaves A, a few
- Coriander leaves — for garnishing
- 5 nos Green chillies — cut into small round pieces
- Salt, to taste
- 1 tsp Mustard seeds
- Oil (Sunflower oil preferred
Preparation
Step 1
Heat the oil in a frying pan.
Step 2
Add mustard seeds and when they crackle, add chopped onions followed by ginger, garlic and curry leaves.
Step 3
Cook until they turn brown.
Step 4
Add the minced meat which has already been boiled.
Step 5
Fry it till it turns brown.
Step 6
Add green chillies along with enough salt.
Step 7
Transfer the contents into a serving plate.
Step 8
Garnish with chopped coriander leaves.
Step 9
: - Serve with rotis and rice.
Tip
Shred the vegetable as fine as you can — the thinner the cuts, the better the thoran. A sharp knife makes all the difference.
