Potato-Urulaikizhangu Karakkary - Brahmin Special
Potatoes, red chilly powder and other ingredients are cooked and season with pepper, asafoetida etc.
Ingredientsfor 4 servings
- 4 nos Potatoes cut in cubes
- 2 tsp Red chilly powder
- 1 tsp Turmeric powder
- Asafoetida A pinch (Kayam)
- 2 tsp Coriander seeds/Dhania
- 1 tsp Pepper
- 1 tsp Cumin seeds (Jeerakam)
- 1 tsp Channa dal
- 1 tsp Mustard seeds
- 2 tbsp Gingelly oil
- 2 tbsp Coconut oil
- Salt, to taste
Preparation
Step 1
For preparing potato/urulaikizhangu karakkary - brahmin special, Heat the oil in a pan and fry mustard seeds and then add potato, turmeric powder, red chilly powder and salt and cook for few minutes.
Step 2
Get another pan and fry items 5, 6, 7, and 8 in little coconut oil. Grind this to powder form. Then add to the 1st step.
Step 3
Add gingeely oil and Let it cook for 5 minutes.
Step 4
Add asafoetida.
Step 5
Cook till the mixture becomes a little brownish in color.
Step 6
Potato/urulaikizhangu karakkary - brahmin special recipe, is ready. This is a good side dish for vengayasambar.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
