Potato Roast
Pan-fried until the edges go dark and crispy, this potato fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 4 servings
- Potato : 4 nos
- Onions : 1 no
- Chilli powder : 2 tsp
- Pepper powder : 1 tsp
- Turmeric powder : pinch
- Curry leaves, to taste
- Salt, to taste
- Oil — for frying
Preparation
Step 1
Boil the potatoes and cut them into small cubes.
Step 2
To this add the masala powders(chilli & coriander powder combined, turmeric powder, pepper powder and salt).
Step 3
Add oil to this.
Step 4
Fry it until the masala roasted, add onions and curry leaves.
Step 5
Serve while still hot.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
