Potato Puffs
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 4 servings
- 2 nos Pastry Puff sheets
- 2 nos Potatoes medium
- ½ tsp Garam masala
- ½ tsp Chilly powder
- 1 tsp Lemon juice or Amchoor powder
- 4 nos Green chillies – 3 — chopped
- 1 tsp Oil
- Salt, to taste
Preparation
Step 1
Cook potatoes till soft.
Step 2
Peel and cut them into small pieces.
Step 3
Set a pan over medium heat and pour in the oil.
Step 4
Place the potato pieces in oil.
Step 5
Add salt, amchoor powder, garam masala and chilly powder.
Step 6
Fry them for about 5 minutes on a medium heat.
Step 7
Once it¦s done, remove from fire and set aside.
Step 8
Get puffs pastry sheets and roll them a little with the rolling pin.
Step 9
Cut them into 4 X 4 inches, square pieces.
Step 10
Place the stuffing on one half of the sheet.
Step 11
Fold the other remaining half of sheet on the stuffing.
Step 12
Get a little amount of water and close both the ends of the stuffed puffs.
Step 13
Follow the same procedure with the remaining stuffing.
Step 14
Place in the oven at 350 degrees for 5 - 10 minutes or till light brown and crispy.
Step 15
Serve while still hot with ketchup.
Tip
Grinding spices fresh makes a noticeable difference. Pre-ground powders lose their punch within weeks. Buy whole, toast lightly, and grind as you need.
