Potato Egg Roll
Eggs cooked the Kerala way — with a rich masala of shallots, tomatoes, and spices. Fast enough for a weeknight, flavourful enough to feel like effort went in.
Ingredientsfor 6 servings
- 250 Potato
- 2 large Onion
- 3 Green chilly
- 3 Egg hard boiled)+
- 1 cup Bread crumbs
- 1 tsp Ginger garlic paste
- 1/2 tsp Turmeric powder
- Garam masala pinch
- 1 tsp Pepper powder
- Coriander leaves, a few
- Curry leaves, a few
- Oil — for frying
- Salt, to taste
Preparation
Step 1
Cook the potato with a pinch of salt and mash it.
Step 2
Warm the oil in a pan and cook onion until golden brown.Then add ginger garlic paste,green chilly and cook again for two minutes.
Step 3
Add turmeric powder,Garam masala,salt,coriander leaves,curry leaves and mashed potatos.Stir everything together thoroughly and take it off the heat.
Step 4
Get a small portion of potato mixture and flatten it with your hand,place a piece of egg and roll it nicely with your hand.
Step 5
Whisk two eggs in a bowl and dip the potato roll in it and followed by bread crumbs.Heat the oil in a pan and fry until golden brown.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
