Potato Egg Pan Cake (Step By Step Photos)
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 1 servings
- 1 Potato
- 1 Onion
- 2 Red chilli
- 1 Egg
- Coriander, to taste
- Salt, to taste
- Oil, to taste
Preparation
Step 1
Peel and wash potato and grate it. Squeeze it well and drain out the excess water. Do the same with the onion. Chop chilies and coriander.
Step 2
Pour oil into a pan and heat it.
Step 3
Add potato, onion, little of coriander and chilli and fry.
Step 4
When the potato is cooked make a small hole in the midst.
Step 5
Break the egg and pour it in the hole and sprinkle the rest of the coriander and chilli and salt.
Step 6
Close the pan with a lid and cook. According to how one wants the egg the cooking time can be altered. Remove from pan and serve with sauce.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
