Potato Curry
most favourite side dish loved by people of all ages. This curry prepared with coconut milk gives some unique taste and flavour. This makes an amazing combo with chappathi, poori, idiyappam etc.
Ingredientsfor 2 servings
- 2 nos Potato — chopped
- 1 nos Onion — chopped
- 1/4 tsp Turmeric powder
- 5 nos Green chillies — chopped
- 1/2 cup Thick coconut milk
- Salt, to taste
- Mustard seeds, a few
- 1 tbsp Oil
- Curry leaves, a few
Preparation
Step 1
Pressure cook potato, green chillies and onion with 1/2 cup water(2 whistles). 2)Open the lid and boil it for 5 to 7 minutes.
Step 2
Meanwhile smash half of the potato with the back of a spoon and leave the remaining intact. Add the coconut milk and required salt.
Step 3
Heat some oil in a pan and allow to crackle some mustard seeds and add curry leaves. Pour the seasoning into the curry.
Tip
Taste the gravy before adding the main ingredient. It should be well-seasoned and balanced on its own — the protein or vegetable will dilute it slightly.
