Plain Flour Appam
Lacy edges, spongy centre — appam is fermented rice batter swirled in a curved pan until it forms a bowl-shaped pancake. The slight tang from fermentation pairs perfectly with a coconut stew or egg curry.
Ingredientsfor 4 servings
- 1/2 kg Rice flour raw is preferable
- 4 nos Eggs
- 8 tsp Coconut milk powder
- 1/2 tsp Yeast
- 31/2 cup Water
- Salt, to taste
Preparation
Step 1
Stir everything together thoroughly rice flour, eggs, coconut milk powder, yeast and water and make the batter.
Step 2
Make sure that flour is mixed well with eggs and water.
Step 3
Leave the batter closed in a pot for 4-5 hours.
Step 4
Then mix salt.
Step 5
Place the non-stick appam thava on the stove & heat it.
Step 6
Pour one big scoop appam batter in the thava & then by holding the both handles, spread the batter in the thava.
Step 7
Close the lid & after 2 minutes, open the lid and take out the appam.
Step 8
Serve while still hot with chicken curry or Egg Masala Curry.
Step 9
This appam can also be served with coconut milk by adding sugar in it.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
