Pineapple Payasam Restaurant Style
A festive Kerala payasam that demands patience and rewards it generously. Milk is simmered for the better part of an hour, thickened with care, sweetened with jaggery or sugar, and served with a prayer that there are leftovers.
Ingredientsfor 5 servings
- 1 nos Pineapple ripe
- 1 small Sabudana Chowwary
- Sugar, to taste
- 4 nos Cardamom (Elakka)
- Vanilla essence A few drops
- Cashew nuts, a few
- Raisins Few, Unakka munthiri
- 2 cup Milk
- Ghee, to taste
Preparation
Step 1
Clean the pineapple, make sure it is only the fruit part. Slice it and remove the center hard part of the pineapple.
Step 2
Grate the pineapple.
Step 3
In a heavy bottomed pan, start cooking the grated pineapple. Stir regularly and make sure it does not stick to the bottom.
Step 4
In another pan, cook sabudana (careful with how much water is added).
Step 5
Once pineapple is cooked, i.e. 60% of the water is evaporated, mix the cooked sabudana(along with the water in which it was cooked).
Step 6
Add milk and sugar to taste. Continue cooking till you get a thick consistency. Continuous stirring is required else the mix will stick to the bottom.
Step 7
Set aside and allow it to cool.
Step 8
Set a pan on the stove add ghee and fry the raisins and cashew nuts.
Step 9
Mix it to the above mix.
Step 10
Add pounded cardamom and couple of drops of essence to the mix.
Step 11
Payasam Ready.
Step 12
It can be served warm or cold like ice cream.
Tip
Keep stirring throughout — the cream that forms on the sides should be scraped back in. That is where the richness comes from.
