Pineapple Kaalan

Ingredientsfor 4 servings
- Pineapple (cut into small pieces
- 2 nos Green chillies
- 1/2 tsp Chilly powder
- 1/4 tsp Turmeric powder
- Salt, to taste
- 1/2 cup Coconut — shredded
- 1/2 tsp Cumin seeds (Jeerakam)
- 2-3 tsp Oil
- 1/4 tsp Mustard seeds
- 1/4 tsp Fenugreek seeds (Uluva)
- 4 - Red chillies (Kollamulaku)
- Curry leaves A, a few
- 1/2 cup Curd
Preparation
Step 1
Cook pineapple in water along with chilly powder, turmeric powder, green chillies and salt.
Step 2
Grind together coconut, cumin seeds and a pinch pf turmeric powder.
Step 3
Add this to the cooked pineapple and cook again on low heat.
Step 4
Warm the oil in a pan.
Step 5
Add mustard seeds and when they allow to crackle, add cumin seeds followed by fenugreek seeds, curry leaves and broken red chillies.
Step 6
Once the pineapple is cooked, add whipped or beaten curd and Stir everything together thoroughly.
Step 7
Don`t cook after or when adding curd. Hence, turn off the heat while adding curd.
Step 8
Add the seasoning into the above mixture.
Step 9
Serve while still hot or cold with plain rice.
Tip
Grinding spices fresh makes a noticeable difference. Pre-ground powders lose their punch within weeks. Buy whole, toast lightly, and grind as you need.
