Malabar Style with coconut - made with a wide variety of vegetables/fruits.
Ingredientsfor 2 servings
- 1 Tomato or Cucumber or Bitter gourd or Vazha pindi or Ripe mango
- 1 Onion
- 2 Green chillies
- 3/4 cup Coconut — grated
- 1 tsp Mustard seeds
- 1/2 cup Curd
- Salt, to taste
- For seasoning
- 1 tbsp Oil
- Mustard seeds
- Dry red chillies (Kollamulaku)
- Curry leaves
Preparation
Step 1
Cut the chosen vegetable/fruit finely into small pieces.
Step 2
Cut onion into small pieces and green chillies finely.
Step 3
Add salt and mix the above ingredients thoroughly with your hand.
Step 4
Believe me, that gives an extra taste.
Step 5
Grind together coconut and mustard seeds with water and add it to the above mix.
Step 6
Add curd and Stir everything together thoroughly.
Step 7
Season it with mustard seeds, red chillies and curry leaves.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
