Peanut Roast
Pan-fried until the edges go dark and crispy, this dal fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 2 servings
- 250 g Raw peanuts Nelakadala
- 1 cup Gram flour Kadalapodi
- 2 tsp Allpurpose flour Maida
- 11/2 tsp Chilly powder
- Garam masala powder A pinch
- Salt, to taste
- Curry leaves A, a few
- Oil — for frying
Preparation
Step 1
Mix together the gram flour, maida, chilly powder, garam masala powder, curry leaves and salt along with water to make a batter.
Step 2
Add the peanuts into the batter and set aside.
Step 3
Set a pan over medium heat and pour in the oil or a kadai.
Step 4
Put the batter coated peanuts into it.
Step 5
See to that the peanuts do not stick to each other while you do so.
Step 6
Remove from the oil when it is duly fried.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
